It’s finally starting to warm up around here. I actually wore flip flops today.
My husband and son decided it was nice enough out to wash the cars. My son ducked out of the pictures. Unless it’s track or cross country related, he hates being in pictures. All of my kids are like that. These days the only pictures I have of them are sports related.
Anyway…if you’ve been following along for the last couple of months, you know I’m test driving a Ford C-MAX ENERGI, which is a plug-in hybrid vehicle, for the Driving on Energi program. I have the use of the car for several months, and I am being compensated, but what I say to you here is always my opinion.
Prior to this, I never really considered driving a hybrid. A plug-in hybrid vehicle uses a rechargeable battery in addition to gasoline. You can run it on electric only, gas only or a combination of both. When I’m driving around town, which is probably 75% of the time, I like to keep in on electric only, because with the stop and go of around town driving, I’m returning energy to the battery every time I brake. Plus when you’re driving on electric, your tailpipe emissions are almost nonexistent.
I’ve hardly put any gas in the car…just a half a tank when I first started driving it, and finally the other day, I did fill up. I like the cost savings associated with using so little gasoline, but I also really like the idea of reducing our dependency on foreign petroleum as well as the favorable impact on the environment.
I’m curious as to your opinion though…have you ever considered driving a hybrid? Why or not? At this point, I’m considering a hybrid for my next car. I’ve really enjoyed driving it. To be honest, the only complaint I have is that I would like more space in the trunk area. But I’m also used to driving something a little bigger. So I would probably go with a larger car next time around with a bit more cargo space.

I love Easter leftovers…especially the ham and potatoes. Every holiday I make my Cheesy Potatoes with Bacon and Leeks…I usually make extra because they always disappear quickly and the leftovers are very popular.
Of course we always make a larger ham than we need for the same reason. We love our leftovers here!
With Easter this weekend, this panini is a great way to use up some of your leftover Easter ham! Of course, you can use deli ham as well.
My Panini Press is a much loved appliance…it gets a lot of use. I don’t often put my panini creations on my blog…I’m not sure why. I think it’s because I don’t really feel like they are recipes because they’re so easy.
This Ham, Brie, Apple and Spinach Panini is literally just that…ham, brie, apple slices, and a handful of baby spinach with homemade honey mustard slathered on one slice of the bread. Use thick slices of bread if you can. The last time I was at the store, they only had pre-cut bread, and I felt like it was a little too thin. Thicker slices seem to hold up better on the panini press. Plus it’s a heartier meal.
One thing to note…brie is not the easiest cheese to cut without it sticking to your knife, but I found this awesome video for cutting slices of brie. This technique really works…I tried it.

Ingredients
- 2 slices thick sliced bread
- ham, 4-5 thin slices
- brie, several slices
- apple, several slices, thinly sliced
- baby spinach, handful
- homemade Honey Mustard
- olive oil
Instructions
- Layer ham, brie, apple and spinach on one slice of bread; slather honey mustard on the inside of the second slice.
- Brush outside of sandwich with olive oil.
- Place in panini press and cook evenly on both sides until brie has melted.
